Serves 6
4-5 apricots, peeled and medium diced
½ red onion, medium dice
2 jalapenos, quartered lengthwise and diced small
2 cloves garlic
½ bunch cilantro, finely chopped
Lime juice
Salt and pepper
Combine the diced apricot, onion jalapenos, garlic and cilantro. Add lime, salt and pepper to taste.
